And when asked what advice he鈥檇 give his 20-year-old self?

鈥淔ollow your dreams. If you don鈥檛 love what you do, you won鈥檛 be happy. Time flies. Don鈥檛 waste it.鈥

鈥淏oth,鈥 he says. 鈥淵ou need some failure to understand life. But I鈥檝e been lucky 鈥 every restaurant I鈥檝e done has been a success. They鈥檙e still running, even the ones I opened years ago in Paris.鈥

Yes, really.

鈥淎s a kid, I only liked potatoes. My parents took me to the best restaurants, and the chef would joke, 鈥楾he bill is low 鈥 your son only eats pommes de terre!鈥欌 he says, laughing.

Now? He鈥檒l bring out the wagyu and ceviche.
