Rajasthani cuisine is loaded with traditional food options which are not only enjoyed by natives but celebrities. As the cuisine represents the culture and heritage of the Rajasthanis, one such dish from the well-known cuisine is kadhi kachori, where every bite tells a story. Heat 1 tbsp oil in a non-stick pan and add cumin seeds, coriander seeds, ginger, green chillies and crushed black pepper. Once the spices are tossed evenly, add the onion and saute well. Stir the dried mango powder and chilli powder into the mixture. Add coriander leaves and mix again. Remove the mixture from the heat and set it aside to cool. Divide the kachori dough into equal portions and add a spoonful of filling into it. Seal the edges evenly and shape the kachoris. Now, heat oil in a heavy-bottomed kadhai and deep-fry the kachoris until golden brown and crisp. Drain the excess oil on paper and place a kachori into serving bowls. Break into medium to small pieces according to your preference and pour a ladleful of kadhi along with tamarind chutney and green chutney. Top the dish with coriander leaves and serve immediately.
